Healthy French Toast

Yesterday my boyfriend and I made french toast for breakfast. It was super easy, delicious, and it was fun to make! Check out the recipe below.

Custard Mix
1 cup half-and-half
3 large egg
2 tbsp honey, warmed in microwave for 20 seconds
1⁄4 tsp salt
8 slice (1/2 inch) day-old or stale country loaf, brioche or challah bread
4 tbsp butter
1/2 tsp of vanilla

Berry Topping (optional)

Handful of Black Berries
Handful of Pomegranate
Honey
Brown Sugar
Tangerine

1)In a medium size mixing bowl, whisk together half-and-half, eggs, honey, vanilla and salt. You may do this the night before. When ready to cook, pour custard mixture into a pie pan and set aside.

2)Preheat oven to 375 degrees F (190 degrees C). Dip bread into custard mixture, allow to soak for 30 seconds on each side, and then remove to a cooling rack that is sitting in a sheet pan and allow to sit for 1 to 2 minutes.

3)Over medium-low heat, melt 1 tablespoon of butter in a 10 inch nonstick saute pan. Place 2 slices of bread at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side. Remove from pan and place on rack in oven for 5 minutes. Repeat with all 8 slices. Serve immediately.

Happy Saturday. I’m currently in Atlanta visiting friends and family and working on some up coming projects. I’ve been on couple adventures this week and I thought I’d share them with you. What have you been up to the week before Christmas? Enjoy.

I got in town late Monday night. Woke up early Tuesday morning to drive to downtown Atlanta for my shoot with Dark Stripe Media. We were on location at an abounded train yard. We were blessed with lovely weather. After the shoot I went to the nail salon and got my nails done. Later that evening I met up with my friend Rachel from high school. My parents gave me two Justin Timberlake tickets for my birthday this June so Rachel and I went to the concert. Justin was absolutely incredible. He sang, he danced, played the piano and guitar. It was a very well put together show. Go see him if you can!

Wednesday I ran errands and picked up some Christmas gifts. I also went to Petsmart and picked up food, cookies, toys, and shirts for my two chihuahuas. I spent some time at home and started reading Perks of being a Wallflower. I also stopped by Whole Foods Market and picked up a Kale Smoothie and some lunch.

Thursday I had a shoot with Christina Kelley in Little 5 Points and on location at an abandoned green house near Emory. Later that day I went to see my hair stylist that I’ve been going to for several years. She worked her magic as always.

This weekend I’ve just been relaxing and spending time with friends and enjoying the holiday. I have lots exciting things coming for 2014!
